Ok, so there are a few basic things to you should know beforehand:
1. A few of the older woman are simply NOT open to dating younger men at all.
2. Some are open to it, and the best case of that are the ones who have a defined preference for younger guys.

Just make sure you use a couple of heavy words, correct grammar and punctuation and that would be enough to convince her that you're too mature for your age. Basically, you just have to make them realize you're not some rowdy jock with no direction in life. Also, when you're fluffing around on emails like asking "how was your weekend etc", always tell them how you've been busy doing a variety of things(and this is a very basic pickup advice I believe). After 2-3 email exchanges either they'll offer you the number or you ask them.
