Yeah that bottle check in thing can be done in most of Asia, I've found.
In Chiang Mai you can bring your own bottle of booze to some clubs and then just buy mixers. I'm not talking about BYOB restaurants, I mean legit clubs.

Siam Paragon is a great mall, its very high end.
I'm sure you can find Thai girls who've been to the west there who know decent English.
There are some very rich girls there so you'll be sure they are not pros or semi-pros.

Yes, day game definitely works in Chiang Mai, although I have not really been as active with it over here. I live across the street from a huge mall and have not been taking advantage of it.

Oh man....I lived sort of near Onnut before my camp got flooded and I had to ship out of Bangkok.
That place is definitely packed with tons of chicks. Never tried hitting on chicks in that area though.....although I went to this mall called "Seacon Square" all the time. If you're living in that area, you can check it out.

For night time I mentioned Ekamai but it depends on what you are looking for and what you are trying to accomplish.
If I was on a holiday and wanted to bring a 'good' girl home that night I would start out at RCA, I personally like SLIM but I prefer hip hop over techno. If I didn't score there I would head to Narz for after hours. There is always a percentage of working girls at any after hours club. At Narz it might be 35% are working while at tourist hot spots like Spicy it is 90% working girls.
The Ekamai area is a bit more pretentious and it helps massively if you have build up some social circles. That is why it is not ideal for people on holiday but great for those who live there.
If you want to get laid 99% of the work is already done once you get her to your place. I bought a 10ft long put put green and putter to put in my condo, then I would hugely exaggerate how I had a golf course in my condo. They were confused but intrigued and it gave them the excuse they need in their head to come home with me.
I can not emphasize this enough 99% of your work is done if you get them to your place!

one more quick tip.
If you want to hook up with a non working girl your chances of getting her to come home with you increases if you are staying in a condo/apartment/house and not a hotel. Obviously she knows you are gone in a few days if you are staying at a hotel.
Now days even if you are staying a few days or a week you can stay in a condo with airbnb dot com. I have used this website twice in europe and I am a big fan.

It is only $27 a night just as an example. You will also find that sometimes you get a local usually happy to help you out that can speak some english.

Yeah there were some great deals on airbnb in Bangkok when I looked a couple of weeks ago, $20 could get you a flash apartment with access to a pool and gym.

Onnut is good in that it is cheap but still on the main line and you can get to whereever you need.
I lived near Seacon square, which is the mall in the area. I spent most of my time either in a muay thai camp in a swamp or around Siam/Asok/Ratchada....so I can't comment on partying oNnut itself.

I'm a Bangkok vet myself and I can add one thing to this discussion that has been overlooked so far: coffee shops, particularly in Thonglor/Ekkamai.
Obviously this is a huge element of day game so you all know about it. However you may not think of it in Thailand because coffee shops where you can post up with a laptop/books are a bit harder to find.
Thonglor/Ekkamai is the best part of town for this because (as you all know) it's hi-so land: most of the girls are middle-upper class, educated in English-taught programs at their universities, and usually you'll catch them studying English-language stuff for their courses.
There are MANY good coffee shops in this area. For starters check out the big Starbucks right at the intersection of Thonglor and Soi 10. I have a few favorites that I won't divulge but if you explore a little bit you'll find some gems. Look for the "hip" ones - girls go there to study so they can be seen (and opened). Note that you can also find these in many other parts of town (around Paragon, parts of Ratchada, Ari, Silom, Lad Prao, etc), but IMO Thonglor/Ekkamai is king.
Easiest opener in the world: Thai language question. Everyone is happy to see you're sitting in a coffee shop studying their language. You can ramble from there (how effective this book is, how you had a shit teacher that never was any help and studying yourself is more effective, bla bla bla).

A little other input on what else has been touched on here:
-internet sites are a waste of time. As you've all discovered, what you see is virtually never what you get. And why bother? Thailand is CRAWLING with girls. There are opportunities to game girls at every corner.
-loved YMG's Paragon game description. Could have written it myself. For Bangkok newbies, follow it part and parcel and start getting numbers. You'll find it's much easier than in other parts of the world: Thai girls are generally friendly (and phone/gadget happy = love to give out their numbers), happy to meet you again, and not overly difficult to escalate things with. (Nice second meetup: ask a girl to take you to her favorite noodle shop/specialty Thai market)
-last thing for today (could probably go on...): for ****'s sake, do not leave the house in shorts and flip flops if you want any results. Put on some jeans and decent shoes at the least. Appearance matters in both day and night game in Thailand quite a bit. At the least, have a "clean" look - nothing turns girls away faster than the dirty backpacker look.

Internet sites are NOT a waste of time IMO, especially if you want to have dates lined up from the second you walk off the plane. I had dates every night for the first week before I even arrived. I've banged around 7 girls from online out of a total of 10 or 11 girls that I've met from websites. Two of those girls I see now on a weekly basis as they are good looking girls and cool. I've mostly used tagged.com which is more social networking than dating so it's not just ugly girls and passport hunters on there. Still there's some decent girls on OKCupid and POF too for Bangkok at least, it gets sparse when you look anywhere else. If you were here for just 2 weeks and didn't want to fuck pros I'd say pipelining is your best bet. I'm here for 5 months total so after arriving I didn't bother to look at the internet anymore as had plenty of other options but I'm glad I used it before hand. There were a couple of girls who didn't quite match up to the pictures, one was definitely a bit older than the pics she used, one had put a bit of weight on but the rest were fine.
As for getting Thai girls numbers, they'll always give it out but doesn't mean they'll respond to your texts or calls or meet again. In my experience often they'll agree to a meet up but try and set it on their terms, like "OK I'll meet you tonight / tomorrow at X" and when I say I've already got plans for that night lets reschedule for Wedneday and go here they'll not reply or the date will never materialise. As soon as you tell them you're busy they correctly make the assumption you're seeing another girl and aren't happy with it. I've actually had one of my regular girls confirm that and a couple other girls reply "Well if you're too busy with other girls we won't be meeting at all" even though I could have been busy with any number of things, then I never here from them again or can't get them to commit to anything. Getting numbers here is the easiest thing in the world, converting them into dates and fucks a little more tricky with any decent girl. As soon as they get an idea that you're playing the field they become less interested regardless of how keen they were on the initial interaction.
A mix of internet, club / bar, street and occassional shoring has worked for me. Currently on around 15 girls after 2.5 months.
Totally agree on the appearance thing. Thais dress well, the girls always go out looking good and the young local guys dress sharp if not a bit metrosexual for the most part and it's not just at night they always look good. Shorts and flips flips are a massive mistake, when I see guys in clubs wearing them with a vest top and a baseball cap I cringe. Don't ever get labelled as a backpacker or sex tourist, it's not a good thing.

For sure don't rock shorts and flip flops when you go out, this will only attract hoookers. I wear nice jeans, shoes and either a long sleeve button up or a nice fitting v neck. Of course I also rock a new era hat backwards which a lot of Europeans will disagree with but it works wonders for me here and in the states. I am a good looking guy though and it is a great prop. Put it on the girls head and she loves it. However you can't dress like a scrub. Nice denim, button up shirt, etc. are important. I can rock the hat because it's part of my personal style that fits with my wardrobe.
As far as online dating, it's great. As mentioned above, mix it with nigh game and day game and you are knee deep in pussy. A good supplement to your week.
Pulling in Bangkok is all about dressing nice and approaching. As a white guy you already have DHV and it's all about numbers. Make enough approaches and you will pull hot girls here. Even super socially awkward guys have hot girls here. I think it is partially due to the language barrier. Thai girls don't realize when they are with super weird white guys lol.

White guys only have superior value to girls from lower to middle class though, most of the HiSo girls aren't going to look twice at you because they have money, status, good jobs, a great social scene etc and have nothing to benefit from dating a farang and everything to lose when people assume they are a prostitute. Not to say they'll never fuck / date you as some will but it's not the norm. I haven't seen any guys I'd say were socially akward with hot, DECENT, girls. The weird white guys I only see with pro's.
