What do you do when you confront someone who can kick your ass?

There is too much missing information here for me to make much more of a recommendation. I don't suggest fighting him the way the others are. you fight the battles where you have the advantage, not where the other guy has the advantage. I mean i guess you could sucker punch him, bring weapons or whatever, but that would hardly solve anything long term, he would likely just escalate shit and get friends to help him really do a number on you because you were attacking him/suckerpunching him whatever.
what i would do? ( and take steps that you don't get caught.) Take a shit in a bag and leave it on his car with a note saying that he is now a member of 'the poop group' and must go and take a shit in a bag and leave it on someone random's car.
Sure you can get his phone number and sign him up for all sorts of gay websites like grindr or whatnot. Sure this would make you feel better, but doesn't really solve the problem. Don't let anything he does affect you, just go about your business and ignore him completely. Guys like this generally hate being ignored. Chalk it up about losing the stuff, but again, i am still not sure why you even think he took something of yours. need more information.

Assuming there is some sort of serial number on the heart rate monitor, and you have some sort of proof of purchase, go to the cops and file a report, explain what happened, you can prove the item of value is actually yours. though I doubt that will actually get your shit back. Definitely file a complaint with the gym, provide them with the relevant details(photocopy of the receipt etc).
Don't loan those sorts of things out in the future.

Make sure you have a good alibi, and if you do decide on retaliation method, stop talking about how he wronged you and plot revenge.

I was once in a school fight where a guy got me in a choke grip (the guy later became a semi-pro kickboxing fighter), but I got a hand in there and he was not able to really choke me at all - thus only keeping me in place. I was stronger and taller than him and I just stood up with him in tow. I even started to get on top of a desk - next maneuver would be to throw myself down and potentially crush him underneath me. However I thought better than that, because such a move might have even killed him. So I let it go, but a part of me wanted to do it, because I had to concede defeat in a way. But should I have popped his eye out Game-of-Thrones-style just for a stupid school brawl?
A man has to know when to let things go. Many criminals behind bars simply lack that kind of wisdom.
The answer to this question is extremely simple. Write off your loss, and if the gym management won't rein this guy in, switch gyms. I personally would only involve the police if the guy was seriously threatening me, so if it came down to physical defense and I had to shoot him or slice him up I'd have a legal record to back up my self defense claim.

I think you need to learn this lesson. Don't lend stuff to people who haven't proven to be of solid character and who have a track record of being responsible.
You have the most responsibility here. You are getting mad at this guy for not behaving like you would. You haven't stated that you had any indication that this guy would behave like you would, so ultimately you should be upset at yourself more than upset at him. He did not steal the item, you gave it to him.
This is a lesson I've had to learn the hard way to the tune of a whole lot more than your ~$100 gym tool. I really don't know what advice to give you regarding confronting the guy, retaliating, or going the police route, but understand that there are repercussions to all of them which you'll have to weigh. The most important thing is that you learn this lesson before it's something way more valuable you loan out.
