So before I leave Central Europe at the start of April I will be stuck here at Easter. In Poland all the cities will be completely empty; are there any countries in Central/Eastern Europe that won't be completely empty next weekend?

Easy answer:
Catholic Easter Sunday: April 1
Orthodox Easter Sunday: April 8
So just move accordingly. But maybe skip tier 2 students town since also in the orthodox countries students might be gone already.

Capital cities will still be decent. Budapest will certainly have people out, it always does.
