I picked up a pair of really thick sirloins from the butcher. They're dry aged and look great.
I have a small charcoal grill that is really just two metal buckets that go inside one another. There isn't a lid.
I've grilled flank steak on it before which I diced into taco meat, but this is a bit different since the steaks cost me a lot of money.
What's the best way to cook a steak that's about an inch and a quarter in size on a charcoal grill that doesn't have a lid?
I was thinking about pan searing the steak on the stove top first about 30 seconds on each side before putting it onto the grill to cook for about 3.5 minutes a side.
Any tips I should check before I dive in later today would be appreciated, thanks!
