This study on gluten consumption in regular children (i.e. not selected for gluten intolerance) is revealing.

Gluten makes you stupid, even if you don't have clinical celiac or gluten intolerance. They did not find an asymmetric effect, in which some individuals had much lower IQs but the rest were fine. The whole bell curve of gluten eaters was shifted lower.

My Gluten-Free Experience

I've tried a few gluten free varieties of hamburgers and pizza to see how I would feel afterwards when compared to their gluten counterpart.

I have to say I do feel a noticeable difference when i opt out of gluten. My stomach doesn't come out so far that I could make my self look pregnant if I force it (lol).

I think from now on ill always try and go for gluten free pizza when its available. Just not having the bloated over-filled feeling is worth it alone.

Italian-American food is very different than actual Italian. Italy is a diverse country though. In the north, pasta is rarely found and typical meals include fish, game meat or poultry with a veggie or canollini beans for a side. You'll see pasta in central and southern Italy (non tourist-zones) but its usually a small side dish. Pizza is very thin crusted and more about the toppings.

My Gluten-Free Experience

I'm currently on a gluten free diet to see if it will help me with my psoriasis for the last month and a half. I originally planned to go for 3 or 4 months, but when I saw that OP started noticing the benefits after 9 months, I think I will try it for a while longer.

Got a lady friend who thought she had IBS for years, but she still would eat shitty foods

Finally, she got serious about seeking out some help with a nutritionist who told her to completely cut out the gluten

The result? noticeable weight loss, the bloating is gone, and she has more energy

Those foods you can't resist: pizza, burgers, pasta can be duplicated at home with a gluten-free version

After a while of eating only meat, fish, vegetables, fruit and cheese I didn't even miss those foods, whereas before I'd always go through them like a train.

Real food, especially unadulterated protein, fills you up and from my experience, nuke cravings.

So true - from what I hear the first week or two is always the hardest. Discipline & being prepared seems to make all the difference

You build up a whole new tolerance & palette
