I've never been over Christmas, but my guess is that it would be pretty quiet, similar to Easter or Thanksgiving weekends. New Years Eve is a legendary party in Vegas, though.
It's the easiest place for gaming, its like shooting fish in a barrel. A lot of people are there on holiday, so girls display all their slutty behavior because they won't get slut shamed. I was there last year, and let me tell you this, it's easier than Bangkok.

Vegas has fun energy and great ratios of annoying yet above average American girls letting their slut sides shine. On the one hand the logistics seem great; everyone is staying in a nearby hotel. However, girls come to Vegas in big groups so it can be tricky to separate them. Also the strip is way more spread out than it seems and sometimes just waiting for a cab can take over an hour. Most importantly everything in Vegas is designed to take your money and it seems that the corporations running the hotels get better at this all the time by including all kinds of hidden fees in everything. In addition to the $30 and up resort fees, they are now starting to charge $20 and up for parking.
I can literally spend a week or two in Latin America, Asia or even Europe for what a good long weekend in Vegas costs. Thus, I only go in certain situations such as stopovers, work and bachelor parties.

Vegas during Christmas sucked for me. I was out there from Christmas Day to New Years Day a couple years ago, and it was dead until NYE. And then NYE it was all overzealous tourists and partiers from LA driving up for the holiday.
