I know there are several gastrophiles on this forum so what better than to ask them for advice.
I'm facing a big problem in terms of what recipes to cook for dinner. I normally work out/goto functions 4 times a week and then get home by 21.00
After this, cooking an Indian dinner (even a simple one) is just too time consuming and elaborate. In addition, after spending time on this forum, I've come to the realization that Indian food is really not ideal for health, especially if you work out.
Therefore, lets pool our collective knowledge and share recipes which can be made for dinner and are easy to cook, fast, nutritious and reasonably cheap. I don't eat red meat, so the only options are chicken, turkey and fish.
Any ideas gentlemen?

If there's someplace that sells cooked chicken breast/thighs, this can save a lot of time/work.
Trader Joe's stores in California sell "Just chicken" packages with a pound of cooked chicken for only about six dollars. I add about a third of a package, add half a can of some vegetarian chili ( about 2.30) and nuke for 2-3 minutes and you've got a high protein, fairly low carbohydrate meal for less than $3.
It also has some fiber in it unlike other super-quick high-protein snacks like milk or yogurt.
Even in Ukraine I found a higher end ( for Ukraine) delis that sold cooked chicken breast and rotisserie chicken.
For me the key is to avoid most frozen dinners because they always try to stuff them with cheap carb stuff like pasta and rice and just a few flakes of meat so there's little protein, yet it is still expensive.

Make a frittata. Turn on your oven and get it pre-heating. In an oven-safe frying pan saute some onion with whatever other vegetables you have on hand, plus whatever meat you want (sausage is pretty normal in a frittata, but you could also add bacon or pre-cooked shredded chicken breast, etc.). While the stuff on the stove cooks, scramble some eggs and/or egg whites in a bowl. You can add in grated cheese, herbs, spices, etc. too. Pour the egg mixture into the frying pan and move it to the hot oven for about half an hour. Now go do other stuff! You can do something southwestern with red pepper, tomato, corn, zucchini, spinach, etc. and some cumin, coriander and chili flakes (plus cheddar, if desired), or go Italian with asparagus, artichoke hearts, eggplant, basil, oregano, parmesan, etc.
For a no-cook dinner you could do a taco salad. Romaine hearts, black beans (rinsed and drained if canned), cooked frozen corn, tomatoes, red peppers, avocado, etc. with salsa for the dressing. Grated cheese if desired. You could cook up some ground chicken or turkey with taco seasonings when you've got time, and pull it out of the fridge to add to the salad. I personally do all this cooking from scratch but you can buy jarred salsa, jarred roasted peppers, canned beans, etc.
I'm a pretty firm believer in cooking when you have time. A little bit of time washing and slicing vegetables or cooking some chicken on Sunday night makes the rest of the week so much easier.

I like to cook up some organic chicken, rice, broccoli, and cheese. Fist put on the rice since it takes longer. About half way through cooking the rice throw some chicken in a pan with some oil. Let the chicken brown and then throw in the broccoli. The rice, chicken, and broccoli are done, throw it in a pan on low and throw a bunch of cheese in there and mix it around. Don't burn it, you only have to let the cheese melt for a minute. Then feast on that bomb shit. It makes for good left overs too.

Spinach, apple, tuna fish, asian ginger dressing
When I'm eating healthy, spinach salads with eggs and whatever the hell else I want to put in them are a go-to.
I was over 30 before I ever made myself a spinach salad for lunch, but they're much tastier than I would have thought. I usually go with asian ginger or blue cheese dressing.

How do you treat the spinach? Most people drop it at a sauteuse for like 30s. It is, of course, a necessary step for it to become mild, but I wonder if there's any alternative for putting more flavor in it.

Raw spinach...it's just oily from the dressing. I like raw spinach better than cooked anyway.

It's always a good idea to cook many meals in one go, then put them into bags and freeze them. It can be done pretty quickly, and it saves a lot of time. The same for individual ingredients, i.e. chopping tomatoes or peppers and freezing them. It doesn't take long to cook 5 or 6 meals, you just throw a load of ingredients and seasoning into a pot or slow cooker and go and do something else until it's cooked.
