The exchange is ok. Dont over-analyze it. Her behavior makes no sense. Big surprise, right? if she doesnt respond to you, just ignore her and move on. Throw a re-start text in a few weeks or so, if you feel like. If she agrees to come out then cancel on her. Your stock is low right now with her, for reasons we ignore.
Dont be affected by it, what you described is quite common: I just had an identical text message exchange with a girl that is super reliable. She suggests to get together, I couldnt (didnt want) to meet her for coffee, so counter-offered something and suddenly she went off the radar. Do I even care to know what is happening or what she is thinking? no, if I were to try to find an explanation or to understand I would have already lost

This is my first post here, and I'm eating up how this evolved. Not really knowing anything about game (until very, very recently), I tried to figure out what was wrong and how I could make the situation better. In other words, I generally try to please everyone, especially girls I like... I've got work to do, but I'm excited.
