I remember reading Lyle McDonald (either rapid fat loss or one of the articles on his site), but he postulated that the cortisol from the stress of exercise and diet caused the drained fat cells to retain water. So you could burn off energy but the fat weight would be replaced by water weight for a while until your system settled down and then you'd piss it all out.
