Most of the OFWs are doing jobs without degrees. Domestic helpers. Nannies. Like you say, waiters. Bartenders. Baristas. Where I am there is a Filipino community. Most of them are dirt poor and uneducated, most of the OFWs don't have a high level education.
You're forgetting the nurses/caretakers. There's an army of them, and the challenges faced by someone born in the Philippines to be hired as a nurse in a 1st world country are considerable. These are very hard working, conscientious individuals, overall.
If you're a nurse in the Phils, you don't make much, it's a massive jump in salary if you can pass all the requirements to be hired abroad. Then you're far away from home, in a culture where that's not easy on people. It's hard.
