These maps are taking into account women all the way up to 75+ years of age, and since women live longer than men in most countries, it appears that there are more women overall. The vast majority of the unpaired women are in the older age range, ~40 and up unfortunately.
If you constrain the age range to 18 - 40 (or hell, even 18 - 30), which is the demographic of most interest to us, you'll find that in almost every country there are roughly equal or slightly more men than women. And in China and India of course there's way, way more dudes.
The whole "In Russia/Ukraine there are more young women than men" thing hasn't been true for more than 10 years at least.
