It looks like for renting an apartment for a week or so, Quito has the most options. Quito is also easily accessible in that you can fly from many U.S. cities to Miami to Quito or from a U.S. city to Bogota, Panama City, or San Salvador to Quito. It shouldn't take more than one connection from any U.S. city.
