Sure they came out somewhat intact, but they were the lucky ones. You don't read about the ones who've been snuffed out forever.
Spain in particular only survived by becoming even more violent and extreme than the Muslims who ruled them were. That is what it will take before Europe enjoys independence again.
Also the rule back then was different. They let the Christians live as an important tax income - Jizya tax. And the Christians supplied them constantly with female and male sex slaves as well as soldiers - they took both when they were children or very young.
Essentially the non-believers were their mules and breeding stock for sex and war.
They survived - yeah. Though I doubt it would go this way - looking at the current Caliphate spirit I think that they would simply kill every unbeliever and expect conversion. They would be too busy fighting with the rest of the world to care about extracting Jizya. You need relative peace for that and an orderly system in place. Many Christians now would fight against them non-stop.
