A good source for cheaper meals is the Fashion Square Mall. There is a food court on the top floor as well as a Grimaldi's Pizzeria, Johnny Rockets, etc. Also an ABC Store (from Hawaii) has basic necessities that are a little cheaper than the Walgreens on the strip.
I'd caution about switching casinos. Thing being, check out time is 11am and check in time is 4pm. If you're wanting to do a dayclub on the day you switch hotels, its not logistically good. Also you'll spend extra money going to the new hotel, waiting in the long Friday afternoon check in lines, etc. Plus on Thursdays, the hotels are usually a little cheaper.
I love eating at nice restaurants and Vegas is good for that. It is a bit expensive though. For example, LAVO at the Palazzo has really great pasta but you can get similar pasta across the street at Maggiano's at the Fashion Square mall for 1/2 the price.
