The reason why Hawaii does so well is because it's mostly asian. The whole state is practically an asian country. Native Hawaiians can become enormous though, those pacific islander genetics of course. Popular local food is a combo of Japanese, Chinese, and Filipino dishes.
Louisiana and Mississippi is hit hard with a large % black population along with lots of unhealthy french/scots/irish mixes with a genetic propensity for obesity. Combine that with fatty but delicious southern cooking and you get enormous Jabba the Huts.
