Yes, Lublin and Bialystok seem like good cities. Przemysl is nice too if you like a bit smaller cities. There are dozens of medium sized cities out there that are worth visiting. Olsztyn seemed nice too.. friendly people. I ended up there by mistake after I missed my stop on the train. I'd recommend taking a trip by train and checking out some cities.
