The same discrimination that you wrote about exists in all EU countries. Employers are required to offer positions to candidates from the EU before those from non-EU countries. For small businesses, hiring you legally would be difficult due to the amount of red tape. As I wrote earlier, Americans and Canadians face the same issues, even if they are highly educated.

In terms of gaming women, discrimination is a non-issue as you can just say you're from Argentina, Mexico, Italy or wherever. Being a popular tourist destination, there will also be other nationalities you can go after.

Rumours about EU collapses are not credible. There are also rumours that California will split from the US and form its own country, but it's equally unlikely. Despite being the most problematic aspect of the EU, not even a single member has left the currency union. Similarly, there have been independence movements in Catalonia since the 1930s, but they are not serious propositions. In terms of risk, two years is not a lot of time. You can still take holidays in other European countries while you're in Spain, can still run your online business, and can study in your native language. If you chose another country, you'll probably be faced with decades of visa issues and limitations on where and how long you can live in each country. In some countries there are no visa categories for independent people, making it impossible to live as you are planning.

Visas in Russia are are not a big issue. Everyone eventually finds a solution. I know teachers of English and Italian. English is the most popular, but Italian, Spanish and French are also studied by young women and those looking to spend a lot of time in 'holiday' destinations.
