I'm naturally very sarcastic and honestly don't give two shits about what others think of me (especially people who I don't know). Without having thought about it too much, here is what I would probably do:
Smile/laugh and say "That's cool. I remember my first beer."
Smile/laugh and say "Apology accepted, just don't do it again." It's especially funny if he never apologized in the first place, but you're accepting it anyway. Make sure to do it in a way that he's left wondering whether you're serious or joking.
