Hispanic could be a blond Spaniard whose family has been living in South America for centuries. And Italians are quite varied - some have skin as white as snow, light eyes, black hair - the same for the Irish.
Ethnic definitions are not difficult - only if you make it so. The US and Canada were created to be colonies for Europeans - they did not have any definition of White, but they certainly had an ethnic definition. Frankly we could all call the varied people Europeans - your ancestors evolved for tens of millennia in Europe and only settled in the last centuries elsewhere.
If you travel around European museums you will likely find a painting of some aristocrat that looks almost like you.
