I think the mistake in that article is assuming that Japanese food is inherently healthy. It's like anything else, you can make it unhealthy if you want to...just go to a Japanese all you can eat that's putting out fresh tempura and see.
That said, conveyor belt sushi is one of the few restaurants I've found in the US where you actually eat cheaper by eating less. Everywhere else you get stuck with a big pile of food.
