Can't figure girl out

I had to edit it. My post was some long ass shit. I'm in Greece, from UK (Greek descent), girl is Eastern European. I'm athletic, tall, good looking, pro athlete, have all the fundamentals going for me, but this situation is proving weird and I'm close to nexting her. I'll try to keep this short. Something about this girl that I want that's been a crazy situation so far. Knew her older sister who is 30. The girl I want is 20. I'm 26. Older one works in a local quiet coffee place, younger one I want works in a busy popular trendy bar/restaurant as a server. Older one turned into a friend in a short space of time. I met them both around November time. Younger one, I gamed every so subtly at her work place, one minute here, 30 seconds here etc. Older one I could speak to more. I was being direct with older one about her younger sister. First she resisted, told me I was too old, basically leave her alone and then I turned her around quickly. Because I saw older one regularly and she turned into a friend even if she was just a barista, I knew I'd kind of have to run things by her. After two or three weeks, I said "does your younger sister have Instagram"? (Of course I already knew she did, I researched the fuck out of it haha). She gave it to me smiling. I knew this was best option. Asking her out at her busy workplace didn't feel right.
I sent younger one message two days later. She replied straight away. I told her let's go out on Thursday when your off. She told me she didn't know what to say, became flaky, but we had some great interactions. She didn't tell me and then I re-initiated on the Friday and she said what she did instead which was to go out with family. Then it turned into regular messages every three or four days over six fucking weeks. I couldn't get her out. Everytime "I'm working", "I'm busy" etc but the messages were all flirty and positive. I was thinking "what the fuck". In the end I told the older sister who was on my side now, "push her, how many times do you think I'll ask for her to tell me an excuse, it's been four or five times now". She has four older sisters, and they were all telling her to go out with me, despite only one knowing me, but I convinced the older sister I know I was a good guy. All this time, six weeks of messages, I didn't go to younger sisters workplace one because it would be weird.
One day, actually, quite shortly after I went 10 days without contact, I got her out. We agreed to go and surprise the older sister at her workplace, have a drink there and then go to eat and she suggested bowling. We did that. Casual meal at TGI's went great. She was feeding me her food, touching my hands, puppy dog eyes with a sigh. She said it was her first ever "date" and that was the reason why I couldn't get her out, she's shy about new people and a bit anti-social plus she works a lot for her age, lot's of 3pm-12pm shifts...she's only been in this country since the summer and doesn't have any real friends. Bowling was closed. Older sister told me earlier "do not take her to your home", so despite her telling me she wasn't tired, there was a language barrier issue and I didn't know if she wanted to go to my place or not, I edged on side of caution and dropped her home around midnight. We played basketball. Some kino, then we went inside and we started to choose a film with her head resting on my leg. She said it was late and for me to pick her up after work tomorrow and we'll watch the film. When I picked her up, she messaged me and said her 17 year old younger cousin was coming. Turns out all the family were home, and I feel like one of the older sisters sent the cousin with her when they found out she was coming to mine. We watched a movie, she put her head on my lap after a while and cuddled up to me, then I dropped them home. Small cousin was in the back, she said "kiss me on the forehead please", and I was like "WTF" but I did it and she loved it, got out the car all giddy.
Next day we agreed we'd go out in the afternoon, but I ended up messaging her late and flaking and told her to come and watch a movie. She said she was sick (she was from a few days ago) but she'll come anyway. I picked her up, she was alone and as soon as she got through the door she went onto the beanbag on the floor alone. Got there, she said forehead kiss, I said no, you forehead kiss me and she said no, but then did, and I did it back. Again, she skipped inside like a loved up puppy.
So, we've now seen each other the first Monday for the first date, then the next Tuesday alone for beach drink/ice cream and fucking basketball. The Wednesday for movie with the younger cousin, then the next day when she was alone, looked sick and sat away from me on the beanbag. Since we started to actually go out, for the first time, she's started to initiate messages in the mornings like sending me funny gifs etc. Since the first Monday date, we've been messaging pretty much everyday.
Following Tuesday comes round, they invite me to coffee with the older sister. I go to pick up younger one, and again, suddenly the younger cousin is coming. I was planning to do something with the "target" afterwards but now we were stuck with the cousin again. Had coffee all four of us, then they said they wanted to go the beach and mess around with a soccer ball. After this bullsh*t, we went back to mine, the younger cousin, the 20 year old target and myself. We watched a movie, and this time she was back cuddling up to me on the couch, legs on lap, then laying down with head on my chest. Holding my hand. One point I had my arm around her neck to hold her, kind of in a choking position. It was just a natural move. Took them home, she said forekiss, something happened or I teased her and she pulled away, and I grabbed her head and did it. She then got out, teasing me she wouldn't give me one. Then she came round the driver side and leaned in through the window and gave me one.
Next night I see her walking home from work with another older sister. I give them a ride home, 5 minutes away, and older sister gets out and the target hands around and I say come to mine tomorrow I'll cook (it was valentines day) and she was unsure. She said we'll talk tomorrow and ran to go inside blowing me kisses. Soon as I get home I get a message saying, what were you doing out at that time "laughing emoji" and I knew she was hamstering about what I was up to. I said "I'll tell you a secret, I live her" and I should have left her guessing but I told her I was out with a friend watching soccer. She said she'll let me know for next day, valentines and text me first thing when she was at work a funny gif, and said she was bored and tired. She said she'll let me know for later and never did. I text her around 5pm when she got off work and she didn't reply. I dumped a small teddy bear with her name on it outside her apartment block and she messaged me about 10pm not mentioning anything. I said "was something downstairs" and she said she got it when she went downstairs to go to the local shop. She said thanks it's so cute, and sent me a pic the next day in bed with it and said good morning. That was Friday. I tried to get her out Saturday night but she was tired from work and I hit her up late like 7pm.
In previous messages, she's been sending blowing kiss emoji's and red love hearts like when she said thank you for the teddy she sent two red love hearts. But then yesterday she posted a picture with a black heart emoji, and was a little cold. That saying, pay attention to what girls do, not what they say, and especially their stupid social media posts. Now it's Sunday. I don't know whether to pull away for a bit, hit her up again or what.
So we've seen each other five times in three weeks. Once for the first date, then again alone for the drink/ice-cream/basketball, then with the younger cousin for movie, then the next night movie but she was sick and sat alone, then for the coffee and football with the younger cousin and again movie but kino on the couch like tickling, intense flirty staring match, cuddling up to me, lot's of comfort etc.
I think she's inexperienced. I think there's a high chance she's a virgin. It's like she's a little scared.
At first, I was scared to escalate, especially the first night because of the older sister thing. Hey. Thanks for the serious reply. This situation has tested me in a number of ways.
1) The absolute amount of work to get her out in the first place. She's been here six/seven months and not gone out with one guy.
2) The fact that I knew/know the older sister and she had me by the balls. The link with her was one of the reasons I managed to get her out.
3) The fact that I like the girl and I view her as a serious potential girlfriend.
To your advice:
1) You are right. But she has initiated the messaging two days after the first date. And she initiated this past Thursday morning and Friday morning as well. She replies if she's online and straight away, like I do if I'm free. Definitely not a troll. But it's been a weird situation because I knew the older sister and she told me the first night when we went out "don't take her back to your place"!. Knowing the older sister and the fact that the younger one tells her everything mind fucked me a little bit in terms of escalating.
A lot of what you said about the kino I've done not the whole lot but I've done a lot. First point, I like to call her a big baby in a fun way. We had a close up staring match with both of us up close and smirking and then we pulled away. But both times she's been round with that level of comfort and kino, the 17 year old cousin has been half a meter away. I don't get that.
