Nah it's not that she has a boyfriend, she just wants to fill the void with your attention. That's so typical for younger girls in the 18-22 range.

I wouldn't have followed up with with the bolded text, you don't want to try to set anything too far into advance especially with it only being a second meet up. Probably fine though since you haven't chased her hard.

Good move with not trying to schedule while she's in finals, when she says she's busy for a whole week then it's best to hold off for the amount of time she told you plus a couple extra days to make sure there's no trace of neediness.

You can respond to them, but I wouldn't respond with any type of direct response to the dumb stuff she's sending you (saying something like "you make a cute unicorn")
If a girl is sending random snaps to me with no purpose most of the time I don't take the effort to reply to them...
UNLESS I think I can work her towards either:
A. A date soon (next 2-3 days)
or

I see more and more girls using snapchat almost exclusively to communicate. It's rare that I will be texting girls that are younger than 22, it's almost always on that app. I think it's because it has built in 'read' functionality, that shows she's ignoring you without being 'rude'.

Germanico has it right. You are the man. Lead the conversation to where you want it to go and let her know what's up. She likes you and wants something from you whether it be attention, another encounter, etc. or else she would not be hitting you up. She just doesn't know how to express it.
