I spent 5 days in Budapest recently. I don't have too much to add on top of what's already in this thread as the data on clubs here is pretty solid. Definitely stay in District VII, preferably close to a club like Szimpla, Morrison's or Instant. It's July so everywhere I went was packed with tourists, fortunately mostly of the slutty variety. As far as specific venue breakdown:

Szimpla: I ended up making this my first-choice club. I felt kind of shitty for going to the same place over and over where everyone's a tourist, but it just made the most logical sense as it was 2 blocks away from my hostel and consistently had people with favorable approach logistics. This is the club where I got my lone notch in Hungary (Irish backpacker). There was always a crowd here, Sunday actually seemed a little more packed than Saturday. The interior is actually pretty cool-looking and the ruins create an interesting party vibe. There are several bars on the main level - I found the best approach spots to be near one of the two bars next to the main floor where people stand and mingle. Dancing seems to be limited to a small area near the front of the club, and people aren't consistently doing it. If you go upstairs there are more bars and a lot of rooms with couches, etc. You should have no trouble finding an isolated spot to take your chick there. Closes at 3:30 or 4AM most nights.

Instant: This place is pretty massive and has a weird, winding layout to it. Like previous posters said, if you prefer dance floor game then this is probably your spot as there are 4 or 5 different dance floors with different music styles. One of the areas of the club resembles an American-style bar where people mill around without much seating. The bar area is very high-traffic as it's situated between two of the dancing areas, definitely the spot you want to be at to run talking game. They're open until 6AM on Saturdays (not sure about other days) and people seem to come here after other places close, although there seemed to be a decent crowd earlier in the night as well. Mostly tourists as well but slightly more Hungarians than Szimpla (which isn't setting the bar very high).

Fogas Haz: Another big ruin bar in District VII. This place has two large areas, one indoors and another open-air. Logistics aren't quite as favorable as Szimpla as more people are seated at tables smoking hookah, although you can still post up near the bar and game chicks as they come to get drinks. Getting a hookah and inviting chicks to smoke might be another possibility. Coming here might be a risk as it didn't consistently draw a crowd, but you should be fine on the weekends. The level of foreigners is about on par with Instant. Overall I liked the vibe here and probably preferred it to Szimpla, but as a pure pickup joint Szimpla is superior.

Anker't: This place is near the opera house. Make sure you know exactly where it is as it's somewhat hidden away behind the buildings across the street from the opera house. The venue is a one-level, open-air club with a big central area and smaller, separate dancing area. The big central square has a fair amount of seating, but people stand and mingle there as well. I found more Hungarians here than any of the above venues and the Hungarian chicks were cuter than average. The main danger here seems to be that that club won't fill up. I tried going here at primetime on a Saturday night and there just weren't enough people to fill the venue. Other than that I thought this was a solid place.

Morrison's: Wandered in here nearly blacked out one night and left shortly thereafter. I don't have anything to contribute about this club but I'm including it because people seem to have a good time here. From what I hear it has people most nights of the week. If I had more time in Budapest I would have checked this place out more thoroughly, possibly as an alternative to Szimpla on slow nights.

Finally, gotta give a shout-out to Istanbul Kebab on Akafca St. (best kebab I had in the city) and the Langos stand on the bridge to Margit Island. Langos is basically a pizza/pie crust with sour cream, cheese, and sometimes other stuff. I liked that stuff a lot.

I was there a few weeks ago and even though I initially planned to stay for 3 nights, I ended up staying for seven.

If I were you, I'd pick a place near Oktogon square (in red). I can't give you a specific hotel (I stayed in a hostel on Kiraly utca), but you should be fine sticking in or around the blue area.
You will be walking distance from many bars and clubs, but if you want to go some place further away, you have metro and trams and taxis, which are not hard to find. Also, supermarkets and stores all around.

I went to few places at night but visited them many times. They were so good proximity and women-wise that I just didn't feel like risking some place far away. I was tempted to try the island Entropy suggested in the OP, but I was on a tight budget and ended up not going.

The places I visited and vouch for were Szimpla (I'd estimate 80-90% foreign girls the times I was there) and Instant (more local girls, still many foreigners). They are both open pretty much every day.

Both places are huge and have many, many ambients and rooms and are mainly sort of pub-style, with people standing up, sitting, playing games (billiards, foosball), whatever.

If you like dancing, Instant is a good pick as they have three dancefloors, usually two playing electronic music and one playing hip-hop.

I met an amazing Hungarian girl in Instant and ended up in a mini-relationship with her for 5 days I had left in the city.

Although these places get busy at around 12pm or 1am, I'd recommend you to arrive at 11pm or so and check out the territory. And when girls start to swarm in, waste no time, as everyone there is horny as hell and if you take too long, groups will form and it'll be harder to join in.

Also, the girl took me to a similar place nearby, which was good aswell. I am not quite sure, but I believe it was this one, Ellató. I'm gonna try to check again and make sure.

There's a place I haven't been to, but heard good things from people in the city. As you wanted, it's a rooftop bar. It's called Corvintetö

A good place to meet people is Deák Ter. There always a bunch of both locals and foreigners any time of day of there. Going around 8pm is money because by that hour people start to meet and drink here planning on where to go later. It's a good spot to find a group to tag along with or to get some info on what places are gonna be good for the night. I specially liked the little pool area, where everyone dips their feet, and the region to the left of it on the map, which is a path where big groups hang out.

I went to a café with the girl I mentioned one night and a guy from the next table started talking to her. He actually bought her a flower from a street vendor and gave it to her while I was in the bathroom! They got some serious nerve and don't give a shit if the girl is with someone. And notice that they're not likely to cockblock by stealing the girl. What they do, not sure if on purpose or not, is turn her off and drive her away with their ridiculous game.

Those two clubs are in District 7, technically.

Go to Google Maps, and look for the two adjacent metro stations on the red line: Astoria and Blaha Lujza Tér.

That general area is a very convenient place to stay and very close to many of the known clubs (Szimpla Kert, Corvintető) that most people have visited.
