Hi Guys! This my first post so I hope that I bring something interesting to the table.
First Id like to let you know that I am a French canadian so my first language is French. If you did not understand something, let me know!
Ok so what brings me to this subject is that I am going to Vietnam for 3 weeks in mid January. I am starting to learn some Vietnamese. I speak with few girls there that i met on Language exchange sites like Interpals and Italki.
Vietnamese language is a Tonal language so you raise, you lower , make all sort of funky things with the prononciation. I feel their is no space for expression or emotions in the voice. (guys that are learning tonal language may understand)
I ask a question to one of the girl:Hey since you have those tones, how can you expression emotions with your voice?
Her response was interesting: You know Vietnamese are accustomed to not showing their emotions. (showing emotions, that a big part of body language i think) So that brings me to this question for you guys:
Since we all know that it is important to be able to recognize indicators of interest (IOIs) from a women, do you find difference in the way body language from asian women vs maybe western women. If yes, do you have exemple of what to look? I want to be sharp on this!

Vietnamese people definitely express emotion, I'd say just as much as Americans.
They do so by changing the length, pitch and volume of their language. Body language and gestures are used a lot, too.
I guarantee you'll be able to figure out if someone is mad, happy, tired, etc. without understanding the tones. Not sure what kind of Vietnamese girls you've been talking to.
As far as IOIs, look at eye contact. Good signs are brief eye contact, a smile, then looking away like she's embarrassed--mostly because she is. Good words to pick up if she's talking to her friends and your'e eavesdropping:
tay: westerner
dep trai: handsome
troi oi: oh my god
Troi oi, tay o do dep trai qua! Oh my god, that westerner over there is handsome as fuck
Other than that, look for giggling and mouth-covering and all the other typical asian girl stuff. It's not cryptic.

In terms of cold IOIs on the street, look for the "eye pop". Eyes going wider as they instinctively react to you.
Asians do mask their emotions with "face" (often literally a blank face lol).
But the eyes are the window to the soul.
Sometimes if she's bitchy/got an ego, she will do the "overly deliberate look away". e.g. you'll catch her looking and she'll look directly up at the sky or to the extreme other side of her vision, lol, as if to say "nope Im not looking anywhere near you". Uumm yeah you were, hehe.
I also second giggling/ and staring. Many times I've thought I was being made fun of, then a girl comes up to shyly ask if she can have a pic with me lol. (rarely cold daytime, but often at night, or if she's in customer service)
Last time it happened a whole family stopped by me while I was sitting on the bench, muttering, looking at me and laughing. I genuinely thought they were laughing at my expense and was about to give them the finger, haha. Then the father approached, signalled his phone, asked me for pics, and took 3 separate pics of me sitting with his wife and two daughters, lol.

I think you're over-thinking this. It seems that you're worried you'll misjudge an interaction, but really you shouldn't care, as it doesn't matter. Game on how you want regardless, if you find out she's not interested then who cares. You're on a 3 week vacation. Just pipeline as many girls as you can ahead of time and approach as many girls as you fancy while there. Bang the ones you can and discard the ones who aren't responding to what you're doing
On a short trip to 'Nam I wouldn't be going around hoping to catch and interpret a coy glance, just plow forward approaching what attracts you.

Just tell them your name is "Jacques 'Le Coq' Grande" from da Quebec and you're in...
Quebec was once a colony of France, as was Vietnam, so you've already got some common ground!

You're not overthinking it. You're in the right mindset. Even if you only speak a handful of phrases in Vietnamese chicks will love it. Good on you for making an effort. If you come to Saigon, let me know what dates you'll be here and I'll try to meet up with you.

The "you're over thinking it" comment is in regard to being concerned about being able to read IOI's and 'Asian body language'- not about speaking the language, which would be a definitely help.

Body language is pretty much global. The pitch of the voice is a small part of the nonverbal communication and just like Sweet Pea said, even in a tonal language you will still be able to recognize someones mode when they speak. Some people might try to hide their body language but it's not really possible if one knows what to look for.

Ho Thanks Guys! Sorry for the delay, no one was responding so I forget to get back to see if someone was responding!
I like all you answers, and I think some of you that mention that I was overthink it have a bit of the truth. Maybe my reasoning was to much but i think it is only part of me being inexperience from going abroad. I am sure with all the good tips that you gave me that I will be well inform. Body language seems to be pretty much universal but I like the nuances that some of you brought up.
I am very curious at the attention I will get there because of the height difference from my country. I am 5 foot 6 and doesnt really have trouble in Canada with women even if I am 3-4 inch smaller than average men. I am a fitness trainor and like to work a lot on self development. I am taking care of myself. Hope to go from dating ok 6-7 women here to 8-9 women there.

In Thailand, one thing I noticed. When girl is really into you/falling in love. She will kiss your hand. Something I have never experienced before. But 3 girls who were really into me done that.
