It's winter, time to eat like a Russian.
My fridge is a bit bare right now. I was hungry and wanted something healthy. Didn't have much but I had this:
A few ounces of Twarog (Slavic Cottage Cheese)
A carrot, A beet, and a tin of herring.
I just googled "Carrot beet fish salad" and got results for this Russian classic, "Herring under a fur coat".
This is not the exact recipe I used, but it provided the inspiration, mine was simpler and the fish rested atop the salad, not underneath.
How I did this:
Boil beet and carrot in salt water. Chop them into small pieces and mix them in a bowl with the twarog, some diced onion and garlic. Then I laid the herring on top of it.
Nutritious, delicious, and simple.
You can spice this up a little more if you like, but for me the diced onion and garlic was sufficient to provide enough good flavor. I didn't even add any salt besides to the boiling water.
