While I definitely think the beta epidemic is worse today than in past eras, unfortunately to a degree I believe it has its roots in biology.

In a book on human body language I've read, it explained how the facial features of women are more "child-like" and perceived as such than those of men on a subconscious, evolutionary level.

This also seems to parallel with some traditional and religious views concerning women, such as in Islamist societies where women are considered like "children" in a lot of ways.

I think this therefore does a lot to explain the psychology of white knights and why this has to some extent been a historical thing.

Much as some overprotective people become outraged over the thought of an adult hitting a kid, compared to a kid hitting an adult, the psychology of the white knight is likewise emotion over reason. (Even hypothetically assuming that the kid was a young MMA fighter who could hit just as hard as an adult; the mere fact that it is a "kid" being hit by "an adult" shortcircuits their reasoning - as was the case in the George Zimmerman / Treyvon Martin case for example).

They aren't able to master critical thought and override their emotional impulse to view women as "sweet innocent snowflakes", just as many do "children", and their instinct to "protect" overrides their reason. (Completely disregarding the truth that just like children, many can be downright brats who need a good spanking, or even worse such as in the case of juvenile murderers).

A white knight therefore parallels with the submissive, "permissive" parent who spoils their kid and lives at their whiny brat's beck and call to do or buy them whatever they want; the kind of parent who yells at the teacher or the little league baseball coach willing to blindly defend their kid at all costs, even when the kid is clearly a manipulative brat undeserving of it.

White knightery is probably hardwired in both women and men like you mentioned. While the latter is wired to defend both women and children, the former is only wired to protect her own children. Women are not wired to care for their men and they are seen as disposable once they outlive their utilitarian value. Once a man fails to provide or even becomes redundant, he is dropped without any remorse or guilt.

Evolutionary psychology explains how humans and animals alike are not adapted to live in an environment with automobiles, hence the deaths. Men are also not adapted to an environment where they are systematically oppressed, where the weaker and dumber sex has all the advantages and bailouts like never before in history... Men are still wired to live in cavemen societies, protect women and children at all costs.

No matter how bad the situation gets their instincts tell them to use themselves as human meat shields to save women over themselves. The James Holmes movie theatre shooting is a perfect example of this. Rationally it made zero sense for these guys to take bullets for their girlfriends. They weren't even carrying their offspring or had any children between them. But their instincts told them to shield the women and got them killed. Most of our instincts are not meant for the world of the 21st century and will continue to hold us back as a species

It's hardwired - sperm is cheap and eggs are expensive. In our caveman brains, a tribe with ten women and five men will outbreed and thus outcompete a tribe with ten men and five women, so without sufficient women our tribe and therefore our bloodline will die out. Hence a natural urge to protect women and children, which I do not categorise as 'white knighting'.

'White knighting' to me is as a result of cultural indoctrination that women can do no wrong and must be backed at all times, no matter what they do or whose fault it is.

The former case is fine, the latter damaging and it creates spoiled, infantalised cunts who then take advantage of said white knights to become even bigger cunts.

I believe this; in fact if a man begins to act like a beta in the relationship, then the dynamic actually shifts to like that of a mother and a son rather than a boyfriend and girlfriend; while initially the woman's maternal instinct might offer a little sympathy for the helpless beta, eventually the Oedipal revulsion inevitably kicks in and she kicks him to the curb.

I think a lot of behavior is learned, and once ingrained, causes irreparable damage.

Case in point, a lot more supposedly straight men started acting and talking like faggots once single motherhood hit its watershed. Fathers weren't around to nip that in the bud.

No doubt we'll get another thirty or forty tumblr genders and sexual identities before that gets fully played out.

I definitely think behaviors can be learned but I think biology is the ultimate overriding factor.

If men are raised by single mothers and trained to act like children instead of men, it least to frustration and repression; deep down these men know that something isn't right but can't quite place it due to having been without a mentor.

The evolutionary reasoning for white knightery is simple - pregnancy is very time-consuming and expensive; an average woman can give birth to maybe 10 healthy children during her reproductive timespan. An average man on the other hand can impregnate hundreds, if not thousands of women within his reproductive timespan.

Women are therefore biologically more valuable than men. Imagine a scenario where some kind of natural disaster befalls the human race, and only two groups of people survive. The first group has 2 men and 10 women, the other 2 women and 10 men. The first group will have much bigger odds for survival. Its two men will organize a harem, live happily and have numerous offspring. Out of the other group's two women, one might die during childbirth and those 10 men would then probably annihilate themselves over the remaining one.

Sperm is cheap, eggs are expensive. From this standpoint, it's not surprising at all why unplugging from the Matrix and accepting the true nature of women was difficult for many of us. We all had to fight not only against years and years of brainwashing, but also against our primal urges that evolved over the course of millions of years.
