Going back to films where the cast just get more and more beta... Hall Pass is one recent one which has really stood out for me. I actually turned it off because it was making me cringe so badly.
Beta to Alpha Transformation Films
Hands down my favorite is The Princess Bride.
You don't get more beta than "as you wish," only to become the man in black - the dread pirate Roberts!

Roger Dodger is about a boy coming to see his uncles because he wants to learn how to get girls. As the movie goes along he slightly gets more confidence. But it's just the first steps towards being alpha

Anything with that goof Kevin James in it...HA HA!

I couldn't get past the trailer and concept of this movie. When I've talked to guys who actually sat through it, I found out it's even worse than I thought.
Come on guys, there are loads of inspiring beta-to-alpha movies.
- Back to the Future (MJF helps his father become alpha)
- The Insider (True moral courage)
- Death Wish (Only the first movie is worthwhile, although Bronson is cool in every movie.)
- Don't tell her it's me (in the end the protagonist becomes beta again..)
- Shawshank redemption (framed accountant -> master prison escapist)
- Lost Highway (A beta wishing he was alpha is the whole point of the movie)
- Once upon a time in the west (see the flashback at the end, an alpha was born at the gallows)
- The Weatherman (Nick Cage gets his shit together)
- Falling Down (On his last day on the job Robert Duvall becomes a real man)
- Harry Brown (Seemingly beta, the old geezer turned out to be a retired bad ass alpha)
- Various coming-of-age flicks such as The Goonies, The Lost Boys or Stand by me show growing manliness.
- The whole series of Breaking Bad (Both Jesse and Walt become alpha males)

Although in the end, he gets the "epiphany" of not being an alpha anymore, The Tao of Steve is a movie about a "loser" (kindergarden teacher) who bangs chicks regularly and teachs his methods of seduction to an AFC.
Face Off, if that counts
I forgot all about Falling Down. That's a good movie.
The count of monte cristo is THE quintessential man transformation story. Go see the movie with Caviezel and the seventies tv feature with Richard Chamberlain.
Balkan Power Individual™
TV series rather than a film, but Breaking Bad is a cool story of a super-beta husband taking control of his fate.
Goodfellas and Scarface both have a similar beta-alpha-beta progression. Or you could say, young alpha to apex alpha to beta.
American Gangster
The Incredibles

I forgot about the movie "Igby Goes Down". It's a small, not well-known movie and I always loved it.
It's about Kieran Culkin (brother of the Home Alone star) who can't relate with his cold family and tells them to go to hell. It's a real coming-of-age flick where the main character gets tested by life and succeeds in becoming a man. He hustles, fucks hot chicks, doesn't go to school, never obeys to his supposed benefactors, moves in with a bunch of freaks and has a grand time doing all that. (He doesn't give a shit when he hears that his father wasn't his real father.)
I don't care if people believe this is alpha male material or not, it's irrelevant, but to survive on your own, not giving up your principles and chasing your dreams is what life should be about. I wish more guys were like Igby.

If you want to see a really good portrayal of the archetypical Alpha/Beta, you gotta see Romper Stomper. The movie shows the life of a pack of boneheads in Australia, also it's one of Russel Crowe's great and early roles. Russel Crowe plays Hando, the alpha neonazi group leader, a friend of his Davey the beta dude of the pack and there is a chick as well of course. Quite some cool sexual dynamics / alpha attitude... and lot of violence, of course.

Yes its a bad movie. It has a few things going for it tho, 2 empire of the sun songs, one funny part, and Nicky Whelan toppless.
