The scent always gives it away.
My dad brought me a jar of coconut oil from his holiday in Southern Vietnam. He saw the entire manual process from the kids getting the coconuts off the trees to the mother making it in their home. The coconuty smell when you open the jar is distinctive and strong.
If what you buy off the shelves don't have that scent, it's been processed with something else. Apparently many idiot consumers do not like the strong coconut scent so some manufacturers would process to get rid of it.
