OP. Don't make the mistake in thinking you can outsmart your market.
Learn what is popular and what the local pallette likes to eat. Also, do a market study and see who your target group is for customers.
Next, as mentioned, you go see what local product you have and then build a menu from there.
My guess is pork or fish will be local to Valencia.
