Paris is not representing France at all. It's a global city like NYC, London, etc. You cannot make assumption of the country when only comparing to Paris.
West part of France, South-West, East ... nothing close to Paris.
It's like taking New-York and talking about the whole US; doesn't make any sense.
If you want to meet true French people, go to second-tiers cities, to the country side, sea-side. Many people who came to France, only visited Paris for a couple of days. It's always made me laugh because I know what they experienced did not reflect "France".
