I wasn't thinking about farms but about the aïd el-kebir, sorry I thought it was obvious.
I can't find a good video now but I've seen it a couple of times, you apply the knife to the throat and slice back and forth, and yes the animal is conscious the whole time that's how it is supposed to be done.

I mean, sure that could be why they cut her head off like that. Doesn't really change that it made the terror attack and video far more soul wrenching.
