My experience with Salsa clubs in the French Riviera and in Prague could not have been more different. In the south of France, there was a free class followed by people dancing. But the level was so good that it was impossible for a beginner to even attempt to dance with anyone. In Praha, nobody knew the first thing about Salsa and girls were dancing with each other. Me and a friend just turned up and girls started gravitating towards us.

Any chance you can make a data sheet on salsa clubs/bars/venues in other countries besides America? I don't know if it was you, but someone mentioned salsa spots in Moscow a couple weeks ago. He disappeared though when I asked him to please break it down in Russia.
