What should I eat to have a soy free/low soy diet?

I started doing more thorough research on this and decided to be more conscious about eating soy-free/low-soy food. I wanted to know what you guys do eat to avoid soy in your diet.

Pretty much this. Avoid snack foods especially. Lots of "snack bars" have soy added, as do cereals and other sugar-infused nonsense. Basic rule of thumb, the more ingredients on the box, the less healthy it will be. You can still get plenty of complex carbs (the good ones) through eating leafy veggies. Avoid bread (full of sugars and soy) and stick to grass-fed meats, nuts, veggies and eggs/fresh fish.

But for someone like myself, I like to have +300g of carbohydrates in my daily diet. I like the strength it gives me. I don't think fruit and vegetables will cut it on its own.

Well, if you look to add a lot of carbs to your diet, try to make sure they aren't simple carbs from sugars. If you Google information on sugar, you'll start to realize that it has all kinds of negative side-effects on the body. Memory loss, weight gain, insulin resistance, cancer, etc. Simply put, our bodies weren't designed to eat all the refined sugars that we now have in the standard American diet. Flip open your pantry and fridge doors and inspect the labels. Everything is HFCS, sugars, etc. added en masse. To stay healthy, you need to buy raw ingredients as much as possible to avoid the extra colorings, sugars, preservatives, etc. Carbs can help you bulk up to a degree, but if they aren't quality carbs, you are making a tradeoff on your long-term health that isn't worth it IMHO.
