I've to update on this one, I put now Peruvian cuisine in number 6 now. Never been to Peru but I was shagging this Peruvian chick some months ago and she showed me some peruvian food. Man I love ceviches, when they're good they're fucking good specially if it comes with a good pisco.

Thai.

But not Pad Thai, that shit is boring. Issan food or old school central Thai food with lots of fermented shrimp/fish. Some Mon influenced dishes are awesome too. Digging into a plate of Khao Chae after wandering around Bangkok in the April heat is the best. Sanguan Sri makes it best, Than Ying if you want a fancier royal style preparation, Saneh Jaan if you want an even more elaborate version from a Michelin starred restaurant.

Vietnamese is great too.

Steak / Wagyu
Sushi
Ramen / Udon / Soba soups and noodles
Kaiseki (high end multicourse meals)
Yakitori / BBQ
Tempura
Izakaya
Curry

The Japanese have alot of pride in their food and have high standards for preparation.

I've never been to a Thai place in the US that I've liked, even in areas with big Thai populations. I don't even bother with them anymore and just save Thai food for when I'm in Thailand, or make it myself.

Agreed. My only quip with Japanese places around where I live is that they're all Chinese-owned and are simply not up to par. From my experience, you have to go to a place like NYC to get some good Jap food.

By the way, there is a chain called Ikinari Steak that has a bunch of locations in Manhattan (and Japan). Their whole menu is just steak and veggies. That's it, no bullshit. You can get a an 18 oz ribeye and steamed broccoli for like $16, I think. It's delicious and I always make sure to drop by whenever I'm in the city.

I would put Vietnamese, Mexican and Caribbean all way up there. I really need to get into making Japanese, it's next on my hit list for learning the flavors and techniques.

Georgian cuisine.

It's by no means an elaborated cuisine, but it's rather unique and tasty -a blend of middle eastern (with less high-fat dishes), balkanic and russian, with lots of different spices and herbs (coriander, tarragon, ect ect). Walnuts and pomegranate are also very present. As raw vegetables. It's an healthy food.

Contrarily to what one might think, there's a lot of excellent russian/FSU dishes, as expected from a region that covered approximately one sixth of the earth's land surface. Uzbek cuisine comes to mind too, but also pelmeni and vareniki, that are great "fast food". Siberian dishes are also great, and not just Kamchatka crabs. Siberia has lots of undiscovered herbs, and venison may taste fantastic with them.

Cuisine from north Brasil is great too (maniçoba, pato no tucupi, vatapa or the incredibly tasty amazonian fishes) - most often cooked with manioc or incredible amazonian herbs ... Bahianese moqueca (seafood cooked in coconut milk and spices) is also mouth watering.

Hands down, nothing beats Peruvian food - it's such an awesome fusion of Spanish, Andean, African, Japanese and Chinese cuisine.

Other than that:

- Italian
- Indian
- Japanese
- Mexican
- Thai

But then again - taste is something that one can argue about...

Best ethnic cuisine?

Chinese food is still the best for me because I am ethnically Chinese and Chinese food is one of the things that I love the most about my Chinese heritage. Cantonese style Chinese food and Chaozhou style Chinese food are my most favourite among all because they are healthier and lighter than the other styles of Chinese food, although I also appreciate the other styles of Chinese food.

Other foods like Japanese, Vietnamese, Thai, Indian, Italian, French, Indonesian, and Spanish are all great as well.
