Why do Westerners/Anglos eat with a knife and fork(instead of a fork and spoon)?

Yeah, and this is something those spoon eaters have to learn. At some point in life, you have to take responsibility for yourself. No safe space where you get chopped food. Some will feel now offended, as victims of the patriarchal knife society that want you to take responsibility for your own food habits. With a spoon you can just spoon and spoon again this food into your mouth without the hard labour of self improvement to cut it.
Some will call it spoon shaming and feel triggert, but in the long run only by our own power we can rise to greatness. This include, nobody will chop your food!
I hate those social spoon warriors!
We will stand tall in the sunshine
With the truth upon our side
And if we have to go alone
We'll go alone with pride
For us, these conflicts can be resolved by appeal to the deeply ingrained higher principle embodied in the law, that individuals have the right (within defined limits) to choose how to live. But this Western notion of individualism and tolerance is by no means a conception in all cultures. - Theodore Dalrymple
