Girl wants to hang out. She's offered to meet up at a bar that she likes. I'm staying in a hotel when we meet and she briefly mentioned that the hotel bar is an option. I assume it's simpler to just be at the hotel so you can just elevator it up - or is doing the scene change back to the hotel for a second drink a better idea?

Yep, given that she's mentioned the hotel bar herself, do hotel bar option. Scene change sounds superfluous.

When you're staying at a hotel your best bets are:
1) Hotel bar
2) Hotel rooftop bar (if it has one)
3) Bar opposite the hotel
You need to sell it to her usually. In this case she's already bought into the idea so logistics should be the least of your problems on this date.
