Encypted Cell phones - BIGINJAPAN - 09-10-2012

I was doing some searching and I know there are threads about encrypted computers but the search didn't return anything on secure cell phones. I noticed the last time I landed in the US that the STASI was requesting to hook into peoples cells phones and download the data.

I have a galaxy S cia tracking device and I was wondering what you computer guys recommend for encrypting my phone and sim card ? Also has anyone dumped the OS and started using gnu/linux on their droids ?
